This is a special I do at the restaurant and sell out every time. I am sorry If the instructions are difficult, I have most of my recipes in my head and dont have amounts for the ingredients as I have done them enough that I know how it should look and taste as I go.

Ingredients:
Redfish Filets Thin
Cream Cheese
Crab Meat
Bacon
Tonys Creole Seasoning

Lay Filets out flat. Smear thin layer of cream cheese on (might have to warm it up to get it thin enough).
Add a thin layer of crab meat on top of cheese and sprinkle a little tonys on.

Roll the fish up and thin wrap a strip of bacon around it. Use toothpicks to secure.

Bake on a sheet pan at 350f for approx. 20-30 minutes.

Add pan drippings to a saute' pan and add just enough flour to form a roux. Next add enough water and cook until you have a medium thick gravey.

To Serve:

Place roulades on top of white rice and pour gravy over top.

Minnesota  "Land of 10,000 Lakes"   Zone  3/4   1- Hoe   1 - 18"  Poulan pro  reartine tiller  1- Small 12" tiller (for weeds) and 1 hoe  total garden rasberry's and pumpkin patch is about 50x80 or so.
