I grew leeks for the first time this year and they did better than I ever thought they would. So I now have about 40 leeks that I don't know what to with.

On another forum I saw somebody saying they split them, put them on a baking sheet with a little olive oil and roasted them. At the end, they added parmesan cheese and put them back in the oven for a few minutes. They said you could also add chunks of squash, potato, cherry tomato or whatever and they bragged on it being very good.

Samcro, Love leek and potatoe soup, but did not know you could freeze it. Have lots of leeks and lots of taters. Anything special you do to freeze it and how long will it last?

rich , not much to it we cook it just under done so when we reheat it, it is cooked... let it cool then freeze it.... a year to a year and half at best .. it is awesome we add bacon bits, sour cream , onion , bit of garlic to it , good hearty soup a pone of corn bread and lay your ears back and eat .
