This last one is my favorite.  I do it on top of the stove using cut fresh tomatoes, onion instead of garlic and oregano instead of basil.  It tastes like pizza and I can make a meal off it if nobody else is here to hog it.  Enjoy.

Thanks Tutti.  I keep going out to my past their prime zucchini plants hoping for reincarnation.  This really makes me wish for more!

This came in this mornings email from Recipe.com.  i thought it looked very good so i got the stuff to make it.  i will report in a day or so on how it went.


creamy linguine with zucchini



Servings: 6 servings
Prep Time: 15 mins
Total Time: 20 mins

ingredients
1  pound  linguine
2  tablespoons  extra-virgin olive oil
3  cloves  garlic, peeled and thinly sliced
2  pounds  coarsely shredded zucchini
1/2  teaspoon  salt
1/8  teaspoon  black pepper
1  cup  shredded sharp Cheddar cheese (4 ounces)
1/2  cup  bottled Alfredo sauce
    Fresh basil, for garnish (optional)
directions
Cook pasta following package directions. Drain; keep warm. In large skillet, heat oil over medium-high heat. Add garlic; cook, stirring, about 30 seconds or until lightly browned.
Increase heat to high. Stir in zucchini, salt and pepper. Cook, stirring often, about 3 minutes or until tender. Add cheese and Alfredo sauce; heat through. Transfer to large bowl; toss with pasta. If desired, garnish with basil.

Per serving: Calories 378, Total Fat 15 g, Saturated Fat 6 g, Cholesterol 28 mg, Sodium 593 mg, Carbohydrate 48 g, Fiber 4 g, Protein 16 g Percent Daily Values are based on a 2,000 calorie diet

Misplaced Texan, I know this must be impossible.  But, I don't know of another gardener in my entire neighborhood!  I see a few people with a couple of tomato plants in pots, etc.   Bayou Gardeners are my only gardening friends but there must not be many Bayou Gardeners in NE Florida--or FL for that matter.  I know there is one person around Crawfordville (about 20 min from me).  I wish someone would leave about 2 bushels of them on my front porch!  Any size.  I even like the big ones!

hilrod,  I did grow my own but the heat zapped them over Memorial Day weekend and it was before I had all I wanted.   I've tried shading them to see if they might reincarnate themselves and I have a sickly looking one I planted later in my front yard but it shows no signs of producing.   I am space challenged so I only had 3 good plants, 2 that never got bigger than a dinner plate, and this one sickly one in my front yard.

I said last year that I was going to give up on Zucchini but planted two hills anyway.  I went out yesterday to pick a couple off of one plant that had a dozen or more small fruit and every one had worm holes.  I'll pull them this weekend and try and stick to my quitting next year.
