I thought I'd post an arbol pepper sauce recipe that is delicious, easy and healthy too. Arbol chillies (peppers) can be bought dried in the enthic section of most grocery stores (at least where I live). Throw a handful of chillies into a hot, dry frying pan and watch them closely as they go from roasted to burned really quickly. When they started roasting (slighltly darkening in color and a roasted smell), pull them off the fire into a blender. Squeeze two to three limes into the blender and add salt. Blend until the peppers form a loose paste (add more lime juice if it's to thick as you want a sauce not a paste). Add salt and enjoy with chips (there goes the healthy), eggs etc. This sauce can be a little spicy for some but it has a delicious roasted flavor.

It sounds like you could also do that with chipotles (roasted jalapenos). The heat can be controlled somewhat by removing the seeds and/or just growing TAM jalapenos. Maybe even an Anaheim green chili that is supposed to be roasted in order to get the skin off. Anaheims are pretty mild, but do have a little heat.
